For clear plastic baits I'd try a misting of black on the back and shoulders, and play around from there.

For solid baits I'd probably start with a white belly, light grey sides and back base coat, and then start trying some darker colors, like dark grey, on the back and shoulders, again misting it so I could sneak up on what I want.

Wouldn't even bother with trying to mix gray with black Gino because gray is just a mixture of white and black. One thing to remember when mixing paints is to add your strongest (black) color into your weaker (white) color. Black is much stronger than white so you should add the black to the white in very small increments until you get the color you want. When mixing colors I've sometimes just dipped the end of a toothpick into the strong color and then stirred it into the weaker color to get what I wanted. Just remember that you can always add more of your strong color, but you can't take it back out.
